Courtney originally hails from the Florida Keys and fell in love with Colorado while visiting her aunt in elementary school. Her interest in nutrition stemmed from her competitive nature while running cross country and track in high school. She found the role of nutrition and its ability to improve performance intriguing and went on to major in nutrition and run Division I cross country and track at Cornell.

Courtney became a Registered Dietitian in 2012 and a Certified Diabetes Care and Education Specialist in 2016. Courtney has worked with a diverse range of practice areas and patient populations including long term care, community health with the Women, Infants, and Children and Ryan White HIV/AIDS programs, food systems management, inpatient and outpatient clinical nutrition, and most recently private practice. Courtney served as the sole clinical dietitian at Mariners Hospital of Baptist Health South Florida in Tavernier, Florida where she was responsible for the inpatient and outpatient nutritional care for the inpatients, outpatient cardiac and pulmonary rehabilitations, and oncology services. There she led an American Diabetes Association recognized Diabetes Self-Management Education program and conducted research on the effectiveness of the program on quality of life through a now validated tool designed to be shared with other educational programs. Her professional interests include diabetes, sports nutrition, gastrointestinal conditions, and plant-based eating patterns.  Her personal interests include skiing, hiking, and traveling. Courtney has completed four marathons and an IRONMAN triathlon.
